30 Minutes or Less: Summer Side Dishes


Halo Folks…

Today’s post is going to be a quicky. Here are a few ideas for some pleasant side dishes which can be made to complement any nice Indian/Malay curry.  Credit goes  to the ‘CEO of Nutella Bank’ for the ideas.

Fresh tomato, onion salsa:

Chopped tomatoes, green chilli, coriander and red onions. Add 2 table spoons of lemon juice

 

Greek salad covered with sliced green pepper and dried cranberries:

Slice green pepper and dried cranberries and sprinkle generously over a greek salad. Spray with olive oil if desired or a nice greek dressing for extra flavour

Cucumber Salad:

Chopped cucumber, 2 table spoons of lemon juice and toasted cumin seeds. For added flavour, add some low fat Greek yoghurt as well.

Apple and Mint Chutney:

 

Green apple peeled, handful of mint, 2 table spoons of lemon juice, 1 green chilli, a little bit of fresh ginger,  garlic, coriander. Liquidize. Garnish with a sprig of coriander.
