30 Minutes or Less: Chicken and Corn Soup for the Soul

Do you know what’s even better for a cold winter’s day than Tom Yum soup or the Chicken and Mushroom Pie that I’ve written about before in previous posts? Ridiculously easy to make, wholesome and soul warming Chicken and Corn soup. Its one of my favourite things to make not only because its simple, but its delicious, it has a bit of a kick and it gives one that warm funny tingly feeling inside (no, not that feeling, get your minds out of the gutter!).  It’s been a big hit when I have made it for others, so its definitely one you should try out. So, no elaborate poetry or funny musings from my side today, lets get down to business:

Ingredients: (serves 4-6)

2 Chicken Breasts
1 can of corn
1 green chilli
2 leeks (or 1 onion)
1 clove garlic
20 mg black pepper
10 mg salt
A handful of coriander
250ml full cream or reduced fat milk
150ml chicken stock
(Optional: 5mg dried chillie pips/flakes, 20 mg corn flour)
 

Preparation:

Cut the green chilli into fine small pieces

Crush the garlic

Chop the coriander into pieces

Chop the leek into very small fine slices.

Open the can of corn! Done!

How To:

Boil the chicken breasts in microwave or in pot in about 200 ml water. Remove, shred and set aside

In a medium pot, set stove to low heat, add a teaspoon of oil and once warm, add the chopped leaks, chopped chilli. Cook for 5 mins, occasionally stirring the ingredients to prevent burning. If the pot is too hot and you think things are starting to burn, add a little bit of water to cool it down.

Add garlic and cook for 1 minute.

Add the tin of canned corn and cook for 3 minutes.

Add the chicken stock, coriander, pepper, salt,  dried chillie flakes (optional), and shredded chicken. Cook for 5 minutes on high heat.

Set stove to low heat, add milk and cook for 5 minutes, stirring continuously. Turn down heat and simmer.

Test for flavour, add salt and pepper, as required and you’re done.

Garnish with whole coriander to make it look pretty.

If too thick add some water or milk, but if not thick enough – add the corn flour to a little bit of cold milk, mix it in well and pour mixture into the soup. Stir slowly in anti clockwise direction while simmering  for a minute or 2 and switch stove off. That’s it folks, warm wholesome chicken and corn soup guaranteed to warm even the coldest of hearts.
